Exhaust manifold gasket. Which way?

Does it matter? Is the shiny side against the head? And what about the exhaust manifold bolt-to-head torque? Thanks.

Metallic side toward the manifold, according to Fel-Pro.

According to an old engine builder I know, it doesn't matter. But if FelPro states a specification, might as well follow that.

If everything is clean & straight, throw them away.

I am with George, GM didn't use them and I prefer not to either.
However, if the manifold is no longer straight I would consider them.
