My favorite home-made car security device was something that a friend had rigged up a few years ago. It involved a hidden switch and a transformer out of an old TV. If you tried to start the car without pressing the switch, you got a very nasty shock. I don't know how well you could make something like that work in one of or trucks, but it is an idea if you know what to do.
