I have only done one, but yes you can the wood without taking off the bed, but the if all the wood is remove at once the bed will drop the thickness on the wood onto the cross sills.

What I did was remove all the wood except one slat in the middle to keep everything up. I inserted the new wood on both edges drilled and coated. Then I removed the last old slat. I then put in all the new wood. If your wood is not precut, you may be pulling pieces in and out till the holes are drilled. Once all the holes are drilled and wood is treated then added the metal strips and bolts.
