The Eaton is pretty simple. The preload on the pinion is controled by the pinion shims. If all you did was replace the pinion seal and did not remove the shims then just retorque the nut to about 220 ft lbs. You should be able to turn the pinion back and forth freely between the backlash. The shims also have an effect on the ring gear back lash. The retainig plate gasket won't make a difference.
Once I ran into a problem when I used a different yoke due to the original yoke having grooves where the seal makes contact, apparently there was a slight difference which caused the preload to be to tight so I had to change the shims. Hope this helps.
