The AC being hooked up is independent of the fan, unless you want it to automatically come on when the AC comes on. You will need some sort of fan controller.
We used the Dakota Digital PAC-2700 fan controller along with the Lincoln Mark VIII fan. It's setup so that you can wire in to come on with the AC if desired and setup for dual or single fans.
We replaced the standard 70 amp relays (because the blew!) with ZETTLER Super ISO Relays (AZ9801-1A-12D) that are 70 amp (you would have to order these online, not very common), and can handle up to 500amp momentary draw. The Mark VIII fan draws upwards of 100amps on startup, for about a millisecond, then levels out to about 30 amps continuous.
Posting a little more information than your question requires, in case anyone else has the same issue with overheating.
I was using a flex-a-lite 210 electric fan setup with controller and having overheating issues. The fan worked beautifully, but it was just not enough CFM going through to cool the beast.
After swapping it out for the Mark VIII fan, which has a low and high speed, we drove around Saturday in 100+ degree weather. Never could get it warm enough to kick in the high fan. When the low fan came on at 185 degrees, the temp would start going down almost instantly and never would get hot enough to kick on the high fan at 195.
A cheaper alternative might be to use a Hayden fan controller with a rated relay for the draw on your fan.
