I think the absolute best solution is an electric fuel pump on a carb'd vehicle. With the pump interrupted the truck will still start, even drive a few feet, and then die. It has always been my assumption that this will frustrate the criminal enough to move on.

As for preventing someone from flat bedding your truck away, that's another story.

Still, beyond the fact they're easy to hotwire, I don't think these trucks are high theft targets. Someone might want to joyride one, but if you're in it for the money I presume you'd be stealing Camrys or some other vehicle that can be parted out for cash.
