That truck was awesome I was so sad when I heard it got stolen, and yes, I've been keeping my eyes open up here.
One easy way to find out -- Look at the exhaust manifolds, if the exhaust goes up then down, it is a 305, if the manifolds go straight down, then it is a 350 (aka, the manifold on a 305 looks upside down, so the cast metal part goes overtop of the plugs, while on a 350, they go underneith)

look on the back side of the block on the drivers side. Right behind where the oil pressure sending unit normally goes. you'll see a pad with casting numbers. If its a 350, it will just have ########, if its a 305 it will have "5.0" cast in along with the #####

I wouldnt use the exhuast manifolds method.
Previous owner(s) may have used the manifolds off the 305 for the new 350. I know I used the same manifolds when I went from 305 to 350.

Do like I did when I first got my 87 when it had the orginal motor I pulled the valve cover off and looked up the casting # on the head.
