Running cold.Correct thermostat fan switch combination?

I have a new 330hp crate motor and a champion 2 row 1inch tube radiator with twin 14 inch thermo fans mounted in a shroud.For some reason the guy who installed the motor paired a 160 thermostat with a 160 turn on fan switch and the motor never runs past 140 in normal driving and fans kick in city driving so it never goes past 150 on the dial.
I have ordered a 180 thermostat with a fan switch that kicks on at 200 and off at 185 is that the correct combination?
The mechanic who installed the motor said SBC like to run cool but I cannot find any support for that theory anywhere on the internet.

Sounds like you are on the right track......ignore the "cool guy".
It needs to get hot enough to "burn off" any condensation that can build up internally. The heat and a properly functioning PCV system work together to remove the vapor that can become sludge.

Thanks .I only became concerned when the run in oil i changed after 300 miles was really black.

PCV and t-stat could be defective; not much to replace both.
Where is fan switch?

thermostat is new fan switch new and on inlet manifold.

This works for me:
I like the adjustable thermostatic fan control w/ radiator drain port thermocouple probe (actually have redundant overkill fan control but thats another story). Lower radiator should be free of steam and provide a stable reference point. Mine has been reliable since 1998. I prefer 195F t-stat. I like to have the flexibility of tuning fan set point. It is likely one of those ask 10 people get 10 answers kinda thing.

I think your setup w/ TC on intake manifold will work. My intake typically runs 195F per IR gun. Yours may run 180 on hwy and 185-200 at red light. Lot of people roll like that; I just prefer a little more heat to help drive off condensate and have seen data to support somewhat lower wear at 195.
