gauge cluster questions

I'm looking to use as much of the original gauge cluster as possible, referring to the actual gauges. So, what gauges can i actually use? Here's what I'm planning to run.
Carburated SBC 350 w/700R4
12 volt system with one wire alternator, HEI
Some issues I've already looked at is:
-The oil pressure gauge looks to be mechanical meaning there is a tube running to the gauge.
-Will the Ammeter work with a 12 volt system? Current flow is current flow, but is this gauge calibrated for a 6 volt system? I was thinking it might peg high or low.
-I'm "assuming" the fuel sending unit I have will work. Its out of a 78' Beauville G20.
-I'm going to locate the temp sensor on the drivers side head between #1 & #2 cylinders. Does anyone see potential problems with this? Maybe a special sensor?
