Is it possible to find the production numbers for a specific color for a specific year?

No. I do not believe that information exists.
You might try contacting the GM Heritage Center archives to see if they have that information. I would recommend asking for either Christo Dantini or John Kyros. http://www.gmheritagecenter.com/ K
