I need help on choosing a stall converter?!.

I need help on choosing a stall for my truck. I am not sure that i fully understand exactly how they work.

i am building a 350 (.30 over), dished pistons, with vortec heads, air gap intake, long tubes, and comp 268 cam. I have a 12 bolt rear sitting under my parts truck and a 10 bolt on my truck now. Right now I am running 31" bfg all terrains but will be going to street tires once these wear down if I dont sell them first.

Anyhow my question is, is a 2800 stall a good choice or what would you guys recommend? I have a guy that wants to trade me the 2800 for something.
