Stop Me Before I Do Body Work Damage

I'm new to body work but I have done a lot of reading on the forum so I thing I'm ready to give it a try. Instead of asking whats the best way to do this or that, I'm going to describe what I plan on doing and someone please stop me if I'm all screwed up.

So here we go, I'm going to start with a front finder, the PO had painted over I don't know what with gray primer. I plan on using a DA sander with 60 grit sand paper to get down to bare metal.

I can't spend a lot of time each day working on the panels so once have it down to bare metal how long do I have before I need to cover it with primer, hours, days, weeks ?
