Getting together parts

Tomorrow i'm going to pick up a set of vortec heads, a performer intake manifold for the vortec heads, and a holly double pumper carb that has a new rebuild. (Has vacuum that kicks in the secondary?) I am considering putting in a cam since i'm going to have my radiator out(putting in a new 4 core) but i'm not sure it will be worth it. BTW, this is a 350 with a granny 4 speed and a dually with a welding rig on the back. HEAVY.
So i want bottom end.
What i'm hoping to get is some tips, i know i need vortec valve covers. Any info on the things i plan on getting? The intake already has a bit of a rise on it. Will the spacer plate from autozone make a difference?
