I did a google search and came up with this:



That looks like an Ididit floor shift model that sits really far in. I think that wheel might hit the dash if it's tilted all the way up though. It might in your truck too but maybe that's OK if it just barely touches since the wheel is padded.

Looks like the '57 to '59 GMC wheel is the same as the Chevy except for the horn button. I like this option the best for you but I'm partial to the vintage look of the large original wheels.
