Converter Stall Speed - What Do You Run

Have a 66 C10 step side with a 300 HP 350 with 700r4 and 3.08 rear gears. I'm a tried and true 4 speed guy but the wife wants to drive this so you know the deal.....compromise = automatic.

Can anyone recommend what level of stall converter would be best with this combo? Not looking for a race unit but daily driver combo with decent manners. Folks I have talked to are all over the place 1500 to 3000 and up stall speed. What do some of you run with your combos?
