rebuild questions

I am getting a 350 built for my new Jimmy and am wondering what I want to make sure to have done. What parts should I use, re-use etc.. I dont really know a lot about the rebuild process and don't want to get screwed. I am looking at around 320-350 hp and similar torque curve. Any words of wisdom from the guru's here would help. Thanks

Oh it is a non emision motor if that helps, and I am using an edelbrock carb 600 cfm, and performer intake.
