Yeah, learning the quirks of starting a carbed vehicle is a good idea. But I still recommend fixing the percolation issue. Otherwise, try pulling a big hill and have the truck conk out 2/3s the way up the hill. Pull the air cleaner off and it's puking gasoline out the vents. Been there, done that. A spacer should help. But I am not sure why the spacer you got was causing so much grief.
I also agree with others about the fuel pressure problem. Eddys must have 5-6psi. Not a bit more or less. Any more will cause drivability problems for sure that resemble percolation issues. If you don't want to go the regulator route, buy an Eddy fuel pump #1721.
