If that's a mostly stock 350, change the tstat to a 195 as that is what they originally came with and that is the temps where they run best. Plus your feet will thank you when winter comes. Lot more heat from the heater with the 195 vs the 160.

Glad you got it fixed and as a bonus, seems like your temp gauge is reading pretty close to correct.
