Late Model Engine Question

I converted an 88 350 from TBI to Carburation. There are several sensors or sending units on the engine that I should not need. I am not sure what all of them are for, there is one behind the starter in the block that is in the way of my headers, there is one above the oil filter, maybe a low oil or change oil soon sensor??? Is it ok to plug these holes? I was going to put the old style oil pressure switch behind the distributor and take out the one that was in the TBI. Does this all sound ok. I appreciate your comments. Thanks
