Chief, I would not recommend using the ship lap planks. Instead I would machine the planks to the factory specs and use the wear strips. As far as the finish goes I would use Epifanes. Prior to using the Epifanes I would recommend 2-3 coats of a sealer. This will seal the grain of the wood and make the job go much faster alowing you to use less varnish. If you do not use the sealer the wood will soak up the varnish and it will take several coats to build. Even after you think you have a good build of varnish it will later show grain without the sealer. I like Pettit for the sealer. Here are some links. The sealer is the 5th item down.
