what carb should i use...

my truck has a rebuilt 355 with mild cam high compression heads and an edelbrock open throat intake with a 3 inth spacer on it. ( my redneck version of A highrise haha) i have a 1406 edelbrock 600cfm on it now and it runs really ritch. the carbs only 2 years old but it sat with gas in it on my project car. i have the air fuel screews turned out 1 1/2 turns and the choke is set right. someone told me it could be gummed up and a float or somethings stuck inside causing it to run rich. i also have a freshly rebuilt 500 cfm edelbrock sittin on my bench. will this be enough for my motor or should i tear my 600 apart and find the problem? thanks
