Water temp help!!!

I have a 72 lb 350 2wd just installed new temp sending unit in left side of head between plugs, my gauge seem to work but after about 15 min of driving it pegs to hot. Just to be safe I installed new water pump, thermostat, upper/lower hoses. still same problem gauge gets pegged to H.
I checked my other gauge set and it does the same thing, I have bypassed factory wires etc.. every possible combo i could think of. still no luck. Truck doesnt overheat, drives fine rest of gauges work ok. Its just an old truck and I'd like to know the water temp is okay. any suggestions BEFORE i install a separate gauge?
