Engine temp??

Hey guys my truck runs at about 210 degrees. Is that a normsl temp or is it too hot. For a while i ran it with no tstat and it was steady at about 180f. I had heard that running it with no tstat would cause sludge to build up. So i put a 180 tstat and now runs at 210f. Im not too comfterable with it at that temp. Any ideas or suggestions? 350/ powerglide combo
