T5 or T56 Manual Tranny questions

I'm thinking about swapping my Bowtie OD 700R4 level II transmission to either a T5 or T56 (maybe Tremec?) manual tranny...so I am looking for input from anyone who has experience or knowledge with instalation. Specifically, I am looking for info concerning mating to a big block with 450hp 490 torque, hydraulic clutch vs. manual clutch and mounting, pedals, shifter positioning, etc. The 700R4 OD I have is fine with only 6000 miles on it but I would like to do better than a 4 gear OD trans.

Any guidance or intel would be much appreciated!
