FNG, and need some help!

Wassup guys and gals, been lurking here for a while now and finally registered up, this site has now turned into a money pit for me with all the rad rides on here!
Any way bought a '66 C10 2 months ago from a guy in GA., he said he really did not have time to drive and it mostly sat, truck was in awesome shape and it fit my budget so I went and got it.

Just got done re-wiring it with a painless kit(anything but for a rookie) and have been driving it everyday. Truck has a 305 V8 with a quadrajet carb on it, I can be cruising but when I hit 50-60mph it starts to bog down like it is going to run outta gas, so I replaced the fuel filter went out and stomped on it and it drove great, been driving fine for 3-4 weeks until today, way home from work it started bogging down again at 55mph, any leads on what to do next would be great as I am not a problem solver in the mechanic field, slowly learning.

I will post pics of my ride when I figure out how to from an iPhone
