coil cutting on a 65 Chevy truck

How much coil spring can I cut off my 65 chevy truck? I want it to be as low as I can get it without it being so rough of a ride that I can't drive it.it has a 04 350 vortec in it.id like it to have a little rake to it and dont want the tires to rub over bumps or while turning.

Here is how id "LIKE" to get it.

And here is a pic of how it sits now. I can get more details if you need them.

I know cutting the coils isnt the best thing to do but im trying to get it ready for the Rodrun in pigeon forge in September .
I just need a general idea of how much to cut front and back.
