Carb Replacement on 327

Since mine is a Daily driver, I'm thinking about taking off the stock 4 barrel carb on my 327 and putting on something new and more reliable.

Ill rebuild the stock carb in time, (already bought a kit) and put it on the shelf in case i ever sell the ol girl.

Never done this before so Id love suggestions on a new carb to go back with. 600-800 CFM? don't want to overdue it and guzzle gas unnecessarily, but i do want performance and power. Edelbrock, Holley, Rochester?

love some advice from the experts. thanks fellas
