temperature sender in block reads 240

I recently did an aluminum radiator and electric fans upgrade and am still tweaking the relay system, but I had a question. My temperature sender in the block reads almost 240 at idle and the gauge in the dash is slightly to the right. Is this too hot? I don't know what my thermostat is in my truck right now either.

I am a little confused on my relay system for my fans. It does cycle on and off while the motor is running, so that part seems to be working. The fans will come back on after I shut the truck off and turn the key to accessories. Is that right?
