How to verify engine alignment?

Hey guys, I am working on mounting my engine to the frame this weekend. I am following Glock's build, and am using the #2 style plates and have modified the passenger side plate to accommodate for the AC compressor. This moves the motor mount back 1.75" from the stock location.

Instead of moving the motor mount back on the engine stand, I am going to move the engine stand back on the frame and weld some metal onto the frame.

My question is this: Since I know that the modification to the engine adaptor plate moved the motor mount/engine stand back 1.75 inches, can I just measure and drill new holes on the top of the frame, bolt down the stand, and know that the engine will be aligned properly? How do I verify the engine alignment? I don't want to be all cockeyed in there.
