1950 3100 Door Sill Plate and Rubber questions

Hello!
We are at the point of fitting the door sill plates and gasket under the sill plate to the door. I have attached some pictures as well. We have a few questions...
1. How important is the gasket?
2. We have aftermarket billet plates that have a longer drop than the factory steel ones - can this be cut?
3. Is there a different gasket we should be using?
4. it appears there is no way to use both parts as is - am i missing something?
