Accelerating from a stop and converter stall

I have a LS1 that dynoed at 354hp at the rear wheels in my 70-C10.
I have included the DynoJet plot.
It is a blast to drive and has a mild lope. Especially noticeable at cold idle.
Motor is stock except for a LS6 intake, headers and a BTR Stage II Truck Cam.
Also running 3;73 gears with a posi.
Here is where I feel I may have made a mistake;
I used the stock truck converter in the 4L60E.
Mind you drive-ability is just fine.
Acceleration is impressive from 10mph and up.
Just not impressed with the acceleration from a stop.
How much difference will adding a 2500 to 2800 stall converter make?
