Chris,
You can hang it off the back like you planned but be sure you get a cover for the tire when you do.
This will really help make it last.
I would try for a hard shell cover over one of the cheapee slip-ons as these tend to blow off real easy.
I think JC Whitney has the van-type hard shell covers.
If I remember right, you can't use a tire under your bumper because the gas tank gets in the way.
Look and see if you have a tank between the frame rails.
If you do then there is no room for a tire.
