If you're going to that extent then yes I would replace all the wear parts if your budget allows. If it isn't in the budget then replace just what needs to be. Something to consider if you're replacing everything is I believe the '73-'87 steering linkage (tierods, sleeves, etc) are a little beefier than the original parts.
