As far as spring bushings I use Jegs or Summit.
For the UHMW between the leafs, I buy 1/16 thick sheet and cut my own pieces. You can get it at a plastic supply or McMaster Carr.
The odd size 9/16 hardware are available at Fastenal.
Center bolts you can get at a spring shop or sometimes Jegs/Summit. Although my 64" leafs had a metric center bolt and the spring shop said to use a standard one. That wasn't good enough for me, it was sloppy. So I bought the correct size metric bolt at Fastenal and turned the head down on the lathe.
