From what you are describing it sounds like the float and or needle and seat are not adjusted properly. A very common mistake when rebuilding these carbs. I would buy the SR kit and one of Cliff's books. Take your time and join his forum over there as there is very specific quadrajet info to be gained. Also double check your ignition system as a weak one will make the truck run poorly as well. I do however your issues stem from the carb and at least fixing that you know you are all good there.
