Safely?3 would be a minimum.4 would be best.
I've done it with me and a friend only but it was a little iffy at times. The tops weigh between 300-350lbs(no ones ever seen actual documentation on the tops weight). You be the judge on how much help you need.

My hubby and I took the doublewall top off our blazer, but we had a platform the same height as the bedside rail so we could just squat under the top and move it onto the platform. Hope that helps or makes sense at least

Some people build a pulley rig that they can just strap and lift the top off so that it hangs from the ceiling of their grarge.

Me and my Dad took my single wall off, we estimated it at weighing about 150-175 without the rear hatch on.
