When I changed my stepside over to a 454, I opted to just remove the front inner wheel wells, bumper, grill and radiator support. I was able to leave the hood and fenders on.
Plenty of room to work and I didn't have to deal with aligning the hood and fenders back up when I was done. Here's what that project looked like:
