I think that is oil drain back to the case. If you think there is a piece in there you should be able to pull the cover and find it.
Too hard to tell in the pic if that is just casting flash or a broken edge...

I just came across a 2005 2500 Silverado rear with 25000 miles on it. Its a 8 lug and a 373. Would that work as a replacement if needed?

I cannot for the life of me imagine how that could have been broken, in use, without splitting the housing into pieces. It's a passage that feeds or drains fluid to or from the bearing. Check figures 22 and 23: http://www.pirate4x4.com/tech/billavista/Gear_Setup/

The bearing that slides over the threads on the pinion, do I need to pack it with grease or does it just run off rear end fluid?

Just a quick assembly grease. Run it for a bit and change the fluid

There's way more going on than just sliding the pinion bearing back in place. You need to address the crush sleeve and bearing preload. I'm the very last guy on here to spout out ominous warnings, but that's one bearing you've got to get right when you're changing it.
