locked brake caliper

Sorry for the long post but want to be thorough.
Working on the front disc brakes on my son's '77 C20. Truck had a squeal when braking so we've taken it apart to inspect. C-clamped the piston to release and Rotors look new (he just bought the truck) so we thought we'd just swap out the pads. Replaced with new Raybestos pads, rotor turned nicely while cleaning up, pumped the brake pedal and the caliper locked up. What have I done and how do I release it?
Second part. New pads came with metal shims (to supposedly stop shudder?) but the pads will only fit w/o the shims. Any problem installing this way?

Several things possible. I will work with one of them. Pull that wheel and crack the bleeder, then try to push the piston back in. If it pushes, replace the brake hose. This happened to me before. Had one lock tight enough that I had to put it in 4wheel low just to move in the yard. The inner liner had deteriorated and acted like a flap.

The piston push in a lot farther than you would think. I work for a transit company mostly fords .but pays the bills it amazes me even after a turned rotor that the pistons have to be in all the way with new pads.
