What this does is makes me wonder if I find one that size will the cap be lower than the thermostat housing?

I'm running a mid 90's 350... this truck is a 67...

Can anyone who is running a 350 get me some sort of measurement from the bottom of the radiator supports to the the actual thermostat height please?
Why not get rid of the radiator cap altogether and get a remote fill resovoir from the junkyard out of a 90's Chevy truck? You will need a short nipple on the side of the radiator to go to the remote fill. You may still have to lower it some, but it looks like you'll have the room.
