I believe what the DMV is gonna be more interested in is what your truck can handle safely load wise rather than how much it actually weighs. I could be wrong.
Just putting 1 ton axles under it doesn't mean it can handle the same weight as a 1 ton factory truck. A 1 ton from the factory is going to have a 1 ton frame which is structurally stronger and the dimensions are different from a 1/2 ton or 3/4 ton frame. Additionally, the springs under a 1 ton are going to have better weight capacity than those under a 1/2 ton or 3/4 ton. If your truck is lifted using aftermarket lift springs, they won't have the capacity of a 1 ton and may even have less capacity than factory 1/2 ton springs. Hope that helps with your question.

well i told them it started out as a 1/2 ton they said they dot care they just need the weight of the truck so they know how much to charge for the tags and i know its not really going to be a one ton but its the only way i can get out of e check and now one better not say run alcohal cause i ran a gallon of it and still didnt pass

If worst comes to worst, run down to an aluminum place that takes cans and stuff and I bet they will weight your truck for free.
If you know how much it weighed stock, I would add about 100 lbs for each 1 ton axle, and if your gonna be running 44's, about 120 or so additional weight for each tire - that should put you pretty close.
