sbc break in

Well finally got my motor all ready to break in so started it running fine but after about 4 min at 2000rpms my temp gauge isnt going up so i shut it down thinkin sonethings wrong. my headers are red hot so shouldnt my temp gauge be reading something i have a new 4 core and dual fans i just had them going full blast what do you think?
